Salad with beans, cucumber, radish and avocado

A fresh and nutritious salad full of crunchy vegetables and creamy avocado. The combination of beans and orange gives it a surprising twist.

Salad with beans, cucumber, radish and avocado

Ingredients

  • 1 can (400 g) mixed beans (such as chickpeas, black beans, kidney beans)
  • 1 cucumber
  • 5 radishes
  • 1 avocado
  • 1 orange
  • Handful of fresh parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper

Preparation method

  1. Rinse the beans and drain well.
  2. Cut the cucumber and radishes into thin slices.
  3. Peel the orange and cut the segments into pieces.
  4. Cut the avocado into cubes.
  5. Mix everything in a large bowl.
  6. Sprinkle with olive oil, lemon juice, salt and pepper.
  7. Garnish with fresh parsley and serve immediately.
