Salad with beans, cucumber, radish and avocado
A fresh and nutritious salad full of crunchy vegetables and creamy avocado. The combination of beans and orange gives it a surprising twist.

Ingredients
- 1 can (400 g) mixed beans (such as chickpeas, black beans, kidney beans)
- 1 cucumber
- 5 radishes
- 1 avocado
- 1 orange
- Handful of fresh parsley
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
Preparation method
- Rinse the beans and drain well.
- Cut the cucumber and radishes into thin slices.
- Peel the orange and cut the segments into pieces.
- Cut the avocado into cubes.
- Mix everything in a large bowl.
- Sprinkle with olive oil, lemon juice, salt and pepper.
- Garnish with fresh parsley and serve immediately.
