Opius - Nutmegg

Ingredients

  • 60 ml Opius Nigredo
  • 15 ml sugar syrup
  • 20 ml cream (20% fat content)
  • 1 egg white (or vegan aquafaba)
  • A pinch of salt
  • Garnish: Freshly grated nutmeg
  • Ice cubes

Preparation method

  1. Place the Opius Nigredo, sugar syrup, cream, egg white and salt in a cocktail shaker.
  2. First shake vigorously without ice (the 'dry shake') to allow the egg white to foam optimally for that characteristic thick foam head.
  3. Now fill the shaker generously with ice cubes.
  4. Shake again vigorously for 15 seconds until the shaker fogs up and is ice cold.
  5. Pour the cocktail through a fine strainer into a stylishly chilled coupe glass.
  6. Finish the glass by grating fresh nutmeg over it; the aroma it releases completes the experience.
