This still white pours crystal clear, without bubbles, with a crisp and mineral character. Sea buckthorn brings juicy fruit and a fresh, lively acidity. Hawthorn adds a soft, floral touch. Gyokuro and white monkey tea make it delicate and layered, with a dry, refined finish.
Silent Shore is the white from København's sommelier line, made to be poured at the table just as you would pour a good white wine. Organic, fermented in Denmark and remarkably light. Serve well chilled in a wine glass and take your time: the longer it sits in your glass, the more layers you'll taste.
