In een wijnkelder onder een Michelinrestaurant in Kopenhagen begon een experiment dat zou uitgroeien tot iets bijzonders. Sommelier Jacob Kocemba zocht naar een nieuw soort aperitief verfijnd als wijn, maar zonder alcohol. Zijn antwoord vond hij in thee. Niet zomaar gezet, maar in lagen, op verschillende temperaturen, met precisie en passie. Zo ontstond Copenhagen Sparkling Tea.

Het huis van Sparkling Tea staat voor iets unieks: de diepgang van thee, de elegantie van mousserende wijn, en het plezier van proosten zonder concessies. Elke fles wordt met de hand geblend uit soms wel 13 biologische theesoorten. Witte, groene, oolong, zwarte thee, kruiden… elk met hun eigen rol. De blends worden vervolgens gebotteld onder hoge druk voor een zachte, verfijnde bubbel.

Sommige varianten bevatten een vleugje biologische wijn, andere zijn volledig alcoholvrij maar altijd draait het om balans, spanning en complexiteit. Sparkling Tea wordt inmiddels geschonken in toprestaurants over de hele wereld, van Scandinavië tot Tokyo. Maar de filosofie blijft simpel: een prachtig drankje maken, waar smaak en beleving samenkomen.

In het huis van Copenhagen Sparkling Tea wordt thee opnieuw uitgevonden. Niet voor een theekop, maar voor het mooiste glas op tafel. Niet als vervanger, maar als een feest op zichzelf.
