Grilled shrimp skewers with lemon-garlic marinade

Grilled shrimp skewers with lemon-garlic marinade

Ingredients

  • 200 grams large shrimps, peeled and cleaned
  • 2 cloves of garlic
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • Wooden skewers, soaked in water (to prevent them from burning)
  • Mixed salad of your choice
  • Cherry tomatoes, cucumber, red onion
  • Extra virgin olive oil and balsamic vinegar, for dressing

Preparation method

  1. Marinating the Shrimp: In a bowl, mix together the finely chopped garlic, lemon juice, olive oil, dried oregano, salt and black pepper.
  2. Add the shrimp to the marinade, making sure they are well coated. Let them marinate in the fridge for at least 15-30 minutes.
  3. Grill Preparation: Preheat grill to medium heat. If using wooden skewers, soak them in water first to prevent burning.
  4. Making the Shrimp Skewers: Thread the marinated shrimp onto the wooden skewers, alternating with any additional vegetables such as lemon slices, cherry tomatoes or bell peppers, if desired.
  5. Grilling the Skewers: Place the shrimp skewers on the preheated grill and cook for about 2-3 minutes on each side, or until pink and firm. Be careful not to overcook them or they will become tough.
  6. Preparing the Fresh Salad (optional): Combine the mixed lettuce, cherry tomatoes, cucumber and red onion in a large bowl.
  7. Drizzle the salad with extra virgin olive oil and balsamic vinegar, and season with salt and black pepper to taste.
  8. Serve the grilled shrimp skewers immediately, possibly with a fresh salad and crusty bread on the side. Enjoy the juicy shrimp with the delicious lemon-garlic taste!
