Grilled shrimp skewers with lemon-garlic marinade
For 2 people. Juicy shrimp skewers marinated in a mixture of lemon, garlic and herbs, grilled to perfection. Serve with a fresh salad and crusty bread. Pairs well with the non-alcoholic white wine Cognato Chenin Blanc

Ingredients
- 200 grams large shrimps, peeled and cleaned
- 2 cloves of garlic
- Juice of 1 lemon
- 1 teaspoon dried oregano
- Wooden skewers, soaked in water (to prevent them from burning)
- Mixed salad of your choice
- Cherry tomatoes, cucumber, red onion
- Extra virgin olive oil and balsamic vinegar, for dressing
Preparation method
- Marinating the Shrimp: In a bowl, mix together the finely chopped garlic, lemon juice, olive oil, dried oregano, salt and black pepper.
- Add the shrimp to the marinade, making sure they are well coated. Let them marinate in the fridge for at least 15-30 minutes.
- Grill Preparation: Preheat grill to medium heat. If using wooden skewers, soak them in water first to prevent burning.
- Making the Shrimp Skewers: Thread the marinated shrimp onto the wooden skewers, alternating with any additional vegetables such as lemon slices, cherry tomatoes or bell peppers, if desired.
- Grilling the Skewers: Place the shrimp skewers on the preheated grill and cook for about 2-3 minutes on each side, or until pink and firm. Be careful not to overcook them or they will become tough.
- Preparing the Fresh Salad (optional): Combine the mixed lettuce, cherry tomatoes, cucumber and red onion in a large bowl.
- Drizzle the salad with extra virgin olive oil and balsamic vinegar, and season with salt and black pepper to taste.
- Serve the grilled shrimp skewers immediately, possibly with a fresh salad and crusty bread on the side. Enjoy the juicy shrimp with the delicious lemon-garlic taste!
