Grilled vegetable and halloumi skewers Ⓥ

Ingredients

  • 200 grams halloumi cheese, cut into cubes
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried mint
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Preparation method

  1. Preparing the Skewers: Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
  2. Alternately thread pieces of halloumi cheese, red pepper, yellow pepper, courgette and red onion onto the skewers until all ingredients are used up.
  3. To prepare the Marinade: In a small bowl, combine the olive oil, dried mint, salt and pepper.
  4. Grilling the Skewers: Heat a grill pan or barbecue over medium heat.
  5. Place the marinated skewers on the grill and grill for about 5-7 minutes on each side, or until the vegetables are tender and the halloumi is lightly browned.
  6. Turn the skewers regularly so that they cook evenly.
  7. Serving: Remove the grilled vegetable and halloumi skewers from the grill and place on a serving platter.
