Grilled vegetable and halloumi skewers Ⓥ
Serves 2. Marinated in dried mint and oil, a lively choice that compliments the ALT Sparkling Organic Rosé .

Ingredients
- 200 grams halloumi cheese, cut into cubes
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon dried mint
- Salt and pepper to taste
- Wooden skewers, soaked in water
Preparation method
- Preparing the Skewers: Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
- Alternately thread pieces of halloumi cheese, red pepper, yellow pepper, courgette and red onion onto the skewers until all ingredients are used up.
- To prepare the Marinade: In a small bowl, combine the olive oil, dried mint, salt and pepper.
- Grilling the Skewers: Heat a grill pan or barbecue over medium heat.
- Place the marinated skewers on the grill and grill for about 5-7 minutes on each side, or until the vegetables are tender and the halloumi is lightly browned.
- Turn the skewers regularly so that they cook evenly.
- Serving: Remove the grilled vegetable and halloumi skewers from the grill and place on a serving platter.
