Lemon-mint granita

For 2 people. A refreshing and light lemon-mint granita, perfect for cooling down on a hot day. Serve with a sprig of mint for a refreshing touch. Pairs well with the non-alcoholic tequila Almave Ámbar .
Lemon-mint granita

Ingredients

  • Juice and zest of 4 lemons
  • 150 grams of granulated sugar
  • 500 ml water
  • A handful of fresh mint leaves, finely chopped
  • Extra mint leaves, for garnish

Preparation method

  1. To make the Lemon Mint Syrup: In a medium saucepan, combine the water, sugar, lemon juice, and lemon zest.
  2. Heat the mixture over medium heat, stirring constantly, until the sugar is completely dissolved and the mixture begins to simmer.
  3. Adding the Mint: Add the finely chopped mint leaves to the pan with the lemon-sugar mixture.
  4. Simmer the mixture for 1-2 minutes, then remove from heat and let cool completely.
  5. Freezing the Granita: Pour the cooled lemon-mint syrup into a shallow container or dish.
  6. Place the container or dish in the freezer and let the mixture freeze for 1 hour.
  7. Stir and Freeze: After 1 hour, remove the container from the freezer and use a fork to scrape the frozen mixture.
  8. Place the container back in the freezer and repeat this process every 30 minutes for about 3-4 hours, or until the granita is completely frozen and flaky
  9. To serve: Spoon the lemon-mint granita into chilled serving glasses or bowls.
  10. Garnish with extra mint leaves for a refreshing touch.
