Lemon-mint granita
For 2 people. A refreshing and light lemon-mint granita, perfect for cooling down on a hot day. Serve with a sprig of mint for a refreshing touch. Pairs well with the non-alcoholic tequila Almave Ámbar .

Ingredients
- Juice and zest of 4 lemons
- 150 grams of granulated sugar
- 500 ml water
- A handful of fresh mint leaves, finely chopped
- Extra mint leaves, for garnish
Preparation method
- To make the Lemon Mint Syrup: In a medium saucepan, combine the water, sugar, lemon juice, and lemon zest.
- Heat the mixture over medium heat, stirring constantly, until the sugar is completely dissolved and the mixture begins to simmer.
- Adding the Mint: Add the finely chopped mint leaves to the pan with the lemon-sugar mixture.
- Simmer the mixture for 1-2 minutes, then remove from heat and let cool completely.
- Freezing the Granita: Pour the cooled lemon-mint syrup into a shallow container or dish.
- Place the container or dish in the freezer and let the mixture freeze for 1 hour.
- Stir and Freeze: After 1 hour, remove the container from the freezer and use a fork to scrape the frozen mixture.
- Place the container back in the freezer and repeat this process every 30 minutes for about 3-4 hours, or until the granita is completely frozen and flaky
- To serve: Spoon the lemon-mint granita into chilled serving glasses or bowls.
- Garnish with extra mint leaves for a refreshing touch.
