Pear tarte tatin with cardamom and vanilla ice cream
Serves 2. An upside-down tartlet of caramelized pears, refined with cardamom and served with vanilla ice cream. The warm, sweet flavors of the tarte tatin are perfectly balanced by the smoky flavor and nutty notes of the Saicho Hojicha Sparkling Tea . An elegant ending to your autumn menu.

Ingredients
- 4 ripe pears, peeled, cored and quartered
- 50g butter
- 100g sugar
- 1/2 teaspoon ground cardamom
- 1 sheet of puff pastry
- Vanilla ice cream, to serve
Preparation method
- Preheat the oven to 200°C.
- Melt the butter in an ovenproof skillet over medium heat. Add the sugar and stir until it begins to caramelize. Once the caramel is golden brown, add the ground cardamom and mix well into the caramel.
- Place the pear quarters in the pan with the caramel, cut side down. Let them simmer for a few minutes so that they absorb the caramel well.
- Place the puff pastry over the pears in the pan, and gently tuck the edges of the pastry into the pan along the pears. Poke a few holes in the pastry with a fork to allow steam to escape.
- Place the pan in the preheated oven and bake the tarte tatin for 25-30 minutes, or until the puff pastry is golden brown and crisp.
- Let the tarte tatin cool for a few minutes before carefully turning it out onto a plate. Serve with a scoop of creamy vanilla ice cream.
