Roasted salmon fillet with spicy seasonal vegetables

Ingredients

  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon paprika powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Seasonal vegetables of your choice (e.g. carrots, broccoli, zucchini, peppers), cut into pieces
  • Fresh herbs such as parsley or basil, for garnish
  • Lemon wedges, for serving

Preparation method

  1. Preheat the oven to 200°C.
  2. In a bowl, mix the olive oil, paprika powder, garlic powder, dried thyme, salt and pepper.
  3. Brush the salmon fillets generously on both sides with this mixture and leave to marinate while you prepare the vegetables.
  4. Divide the sliced ​​seasonal vegetables over a baking tray lined with baking paper.
  5. Sprinkle the vegetables with a little olive oil and season with salt and pepper.
  6. Place the marinated salmon fillets on the baking tray among the vegetables.
  7. Place the baking sheet in the preheated oven and roast for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender and lightly browned.
  8. Remove the baking sheet from the oven and divide the roasted salmon fillets and vegetables between two serving plates. Garnish with fresh herbs such as parsley or basil. Serve with lemon wedges on the side for those who want extra lemon juice.
