Ingredients

  • 100 grams mixed lettuce (such as lamb's lettuce, spinach and romaine)
  • 1 carrot, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1 red chili pepper, finely chopped (remove seeds for less spiciness)
  • 1 spring onion, thinly sliced
  • Handful of fresh coriander, coarsely chopped
  • Handful of unsalted peanuts or cashews, coarsely chopped
  • dressing: 1 tablespoon soy sauce, 1 tablespoon rice vinegar, 1 teaspoon honey or maple syrup, Juice of half a lime, 1/2 teaspoon sesame oil, Optional: a little grated fresh ginger

Preparation method

  1. Mix all the ingredients for the dressing in a bowl and stir well.
  2. In a large bowl, combine the lettuce, carrot, cucumber, chili, spring onion and coriander.
  3. Pour the dressing over the salad and mix everything well so that the flavors are nicely absorbed.
  4. Sprinkle with chopped peanuts or cashews for a crunchy bite.
