Ingredients
- 50 ml Rebels 0.0% Gin
- 25 ml lavender syrup
- 15 ml fresh lime juice
- 20 ml aquafaba (or egg white, if desired)
- 30 ml non-alcoholic kombucha, Wilder Land it's always spring
- Garnish: fresh lavender flowers and a few pink peppercorns
Preparation method
- Start by shaking Rebels 0.0% Gin, lavender syrup, lime juice and aquafaba in a shaker without ice (dry shake). This will ensure that the aquafaba foams well and the cocktail gets a silky smooth texture.
- Add ice to the shaker and shake again to thoroughly chill the cocktail and blend the flavors.
- Double strain the cocktail into a chilled coupe glass to remove the ice flakes and create a smooth, creamy drink.
- Carefully add the kombucha to give the cocktail a sparkling finish without disturbing the foam.
- Garnish with fresh lavender flowers and a few pink peppercorns for a sophisticated presentation and a subtle aromatic boost.
