Saicho uses single origin teas that are picked by hand. There is simplicity and purity in the use of single origin tea. This gives the tea its own character.
Each individual tea is cold brewed for 24 hours to extract the most delicate and complex flavors. The tea is then balanced to the correct sweetness and acidity. As a finishing touch, the bubble enhances the taste of the tea.
