Bruschetta with ricotta and tomato
Fancy something light and tasty? These bruschettas with creamy ricotta and juicy tomatoes are quick to make and packed with flavour. Perfect as a snack, starter or summer lunch.

Ingredients
- 1 baguette
- 200 g ricotta
- 250 g cherry tomatoes
- Fresh basil
- Olive oil
- Optional: lemon zest, pepper to taste
Preparation method
- Cut the baguette into diagonal slices and toast them briefly in a grill pan or toaster.
- Mix the ricotta with a pinch of pepper and possibly some lemon zest for extra freshness.
- Halve the cherry tomatoes and mix with a dash of olive oil.
- Spread the rolls with ricotta, divide the tomatoes over them and finish with fresh basil.
- Serve immediately, with an extra drizzle of olive oil if desired
