Chocolate fondant with red fruit coulis

Ingredients

  • 100 grams of dark chocolate
  • 50 grams of butter
  • 2 eggs
  • 50 grams of icing sugar
  • 30 grams of flour
  • Butter and flour, for greasing the baking tins
  • 150 grams of red fruits (e.g. strawberries, raspberries, blackberries)
  • 2 tablespoons sugar
  • Juice of 1 lemon

Preparation method

  1. Preparing the Chocolate Fondant: Preheat the oven to 180°C and grease the baking tins with butter and dust them with flour.
  2. Melting the Chocolate and Butter: Melt the dark chocolate and butter in a bain-marie or in the microwave. Stir regularly until the mixture is smooth and completely melted. Allow to cool slightly.
  3. Preparing the Batter: Beat the eggs together with the icing sugar until light and fluffy.
  4. Add the chocolate-butter mixture to the egg mixture and mix well.
  5. Sift the flour over the mixture and gently fold it in until everything is well combined.
  6. Filling the baking cups: Divide the batter evenly over the greased baking cups.
  7. Baking: Bake the chocolate fondants in the preheated oven for 10-12 minutes, or until the edges are set but the center is still soft.
  8. Preparation of the Red Fruit Coulis: Puree the red fruits together with the sugar and lemon juice in a blender or food processor.
  9. Pour the mixture through a fine sieve to remove any seeds.
  10. Serving: Carefully remove the chocolate fondants from the molds and place them on serving plates. Drizzle the red fruit coulis over the fondants.
