Chocolate fondant with red fruit coulis
Serves 2. Rich chocolate with a fruity coulis, a decadent match with Acala White Wine Style sparkling tea .

Ingredients
- 100 grams of dark chocolate
- 50 grams of butter
- 2 eggs
- 50 grams of icing sugar
- 30 grams of flour
- Butter and flour, for greasing the baking tins
- 150 grams of red fruits (e.g. strawberries, raspberries, blackberries)
- 2 tablespoons sugar
- Juice of 1 lemon
Preparation method
- Preparing the Chocolate Fondant: Preheat the oven to 180°C and grease the baking tins with butter and dust them with flour.
- Melting the Chocolate and Butter: Melt the dark chocolate and butter in a bain-marie or in the microwave. Stir regularly until the mixture is smooth and completely melted. Allow to cool slightly.
- Preparing the Batter: Beat the eggs together with the icing sugar until light and fluffy.
- Add the chocolate-butter mixture to the egg mixture and mix well.
- Sift the flour over the mixture and gently fold it in until everything is well combined.
- Filling the baking cups: Divide the batter evenly over the greased baking cups.
- Baking: Bake the chocolate fondants in the preheated oven for 10-12 minutes, or until the edges are set but the center is still soft.
- Preparation of the Red Fruit Coulis: Puree the red fruits together with the sugar and lemon juice in a blender or food processor.
- Pour the mixture through a fine sieve to remove any seeds.
- Serving: Carefully remove the chocolate fondants from the molds and place them on serving plates. Drizzle the red fruit coulis over the fondants.
