Lemon Meringue Pie

Ingredients

  • 1 cake base
  • 2 lemons (juice and zest)
  • 100 g sugar
  • 3 eggs
  • 50 g butter
  • 3 egg whites
  • 50 g icing sugar

Preparation method

  1. Preheat the oven to 180°C.
  2. Heat the lemon juice, sugar, butter and eggs in a bain-marie until thick.
  3. Beat the egg whites with icing sugar until stiff.
  4. Fill the pie crust with the lemon filling and cover with the meringue.
  5. Bake for 10 minutes until the meringue is golden brown.
