Lemon Meringue Pie
This cake has a delicious balance of fresh and sweet. The creamy lemon filling gives it a fresh taste, while the soft, airy meringue gives it a sweet finish.

Ingredients
- 1 cake base
- 2 lemons (juice and zest)
- 100 g sugar
- 3 eggs
- 50 g butter
- 3 egg whites
- 50 g icing sugar
Preparation method
- Preheat the oven to 180°C.
- Heat the lemon juice, sugar, butter and eggs in a bain-marie until thick.
- Beat the egg whites with icing sugar until stiff.
- Fill the pie crust with the lemon filling and cover with the meringue.
- Bake for 10 minutes until the meringue is golden brown.
