Mango salad with feta, avocado and crunchy nuts

This Mango Salad with Feta, Avocado and Crunchy Nuts is a summer salad full of flavor and color. The sweet mango, creamy feta and soft avocado are a perfect balance, while the roasted nuts provide a crunchy bite.

Mango salad with feta, avocado and crunchy nuts

Ingredients

  • 1 ripe mango, diced
  • 1 avocado, diced
  • 75 g feta, crumbled
  • Handful of mixed lettuce (e.g. arugula, spinach)
  • 30 g mixed nuts (e.g. walnuts, almonds), roasted
  • 1 small red onion, thinly sliced
  • Juice of ½ lime
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Preparation method

  1. Peel and cut the mango and avocado into cubes.
  2. Cut the red onion into thin rings.
  3. In a large bowl, combine the mango, avocado, red onion and mixed lettuce.
  4. Crumble the feta over the salad.
  5. Roast the nuts briefly in a dry frying pan until light brown. Sprinkle over the salad
  6. Whisk together a dressing of lime juice, olive oil, salt and pepper.
  7. Pour the dressing over the salad and toss gently.
