Oysters with citrus dressing

Oysters with citrus dressing

Ingredients

  • Juice of 1 lemon
  • 1 small shallot, very finely chopped
  • 1 teaspoon Tabasco
  • Pinch of sea salt
  • 12 fresh oysters

Preparation method

  1. Combine the lemon juice, finely chopped shallot and Tabasco in a small bowl.
  2. Add a pinch of sea salt and stir well.
  3. Let the mixture rest for 5 minutes to allow the flavors to meld.
  4. Open the oysters carefully and check for grit or shell fragments.
  5. Just before serving, spoon a small amount of dressing over each oyster.
