Oysters with citrus dressing
A festive start to dinner: fresh oysters with a refreshing citrus dressing of lemon, shallot, and a touch of Tabasco. Simple, elegant, and perfectly balanced. For 12 oysters (suitable as a starter for 2 people)
Ingredients
- Juice of 1 lemon
- 1 small shallot, very finely chopped
- 1 teaspoon Tabasco
- Pinch of sea salt
- 12 fresh oysters
Preparation method
- Combine the lemon juice, finely chopped shallot and Tabasco in a small bowl.
- Add a pinch of sea salt and stir well.
- Let the mixture rest for 5 minutes to allow the flavors to meld.
- Open the oysters carefully and check for grit or shell fragments.
- Just before serving, spoon a small amount of dressing over each oyster.
