Seafood salad with citrus dressing
For 2 people. A light salad full of shrimp, crab and squid, finished with a citrus dressing. The Hojicha with its deep umami character enhances the salty flavors of the seafood. Pairs perfectly with Saicho Hojicha 's sparkling tea.

Ingredients
- 200 grams shrimp / 200 grams crab meat / 200 grams squid
- Mixed salad of your choice (e.g. rocket, lamb's lettuce, or baby spinach)
- 1 cucumber
- 1 red onion
- A handful of cherry tomatoes
- Fresh coriander or parsley, chopped (optional)
- Fresh lemon wedges, for garnish
- Juice and zest of 2 lemons
- Juice and zest of 1 orange
- 2 tablespoons olive oil
- 1 teaspoon honey
Preparation method
- Preparing the Salad: Mix the cooked shrimp, crab meat and squid in a large bowl.
- Add the mixed lettuce, cucumber slices, thinly sliced red onion and halved cherry tomatoes.
- Toss gently to combine all ingredients.
- To prepare the Citrus Dressing: In a separate bowl, combine the juice and zest of the lemons and orange.
- Add the olive oil and honey, and season with salt and black pepper. Whisk well to emulsify the dressing.
- Serving: Divide the seafood salad among serving bowls.
- Sprinkle the salad generously with the citrus dressing.
- Garnish with chopped fresh coriander or parsley (optional) and fresh lemon wedges.
