Seafood salad with citrus dressing

Ingredients

  • 200 grams shrimp / 200 grams crab meat / 200 grams squid
  • Mixed salad of your choice (e.g. rocket, lamb's lettuce, or baby spinach)
  • 1 cucumber
  • 1 red onion
  • A handful of cherry tomatoes
  • Fresh coriander or parsley, chopped (optional)
  • Fresh lemon wedges, for garnish
  • Juice and zest of 2 lemons
  • Juice and zest of 1 orange
  • 2 tablespoons olive oil
  • 1 teaspoon honey

Preparation method

  1. Preparing the Salad: Mix the cooked shrimp, crab meat and squid in a large bowl.
  2. Add the mixed lettuce, cucumber slices, thinly sliced ​​red onion and halved cherry tomatoes.
  3. Toss gently to combine all ingredients.
  4. To prepare the Citrus Dressing: In a separate bowl, combine the juice and zest of the lemons and orange.
  5. Add the olive oil and honey, and season with salt and black pepper. Whisk well to emulsify the dressing.
  6. Serving: Divide the seafood salad among serving bowls.
  7. Sprinkle the salad generously with the citrus dressing.
