Squid fritters

Ingredients

  • 2 squids
  • 1 egg
  • 50 g flour
  • 1 lemon
  • Frying oil
  • 7 g capers
  • 7 g pickles
  • 1/3 clove of garlic
  • 1 sprig of parsley
  • 100 g mayonnaise
  • Juice of 1/3 lemon
  • Salt and pepper

Preparation method

  1. Make the tartar sauce: chop the capers, gherkins, garlic, and parsley. Mix with the mayonnaise and lemon juice. Season to taste.
  2. Clean the squid, cut into rings.
  3. Prepare two bowls: one with beaten egg, one with flour.
  4. Heat oil to 160°C. Coat squid in egg, then flour. Deep-fry for 5 minutes.
  5. Drain on kitchen paper and sprinkle with salt.
  6. Serve with lemon wedges, tartar sauce and a glass of Riva.
