Squid fritters

Ingredients
- 2 squids
- 1 egg
- 50 g flour
- 1 lemon
- Frying oil
- 7 g capers
- 7 g pickles
- 1/3 clove of garlic
- 1 sprig of parsley
- 100 g mayonnaise
- Juice of 1/3 lemon
- Salt and pepper
Preparation method
- Make the tartar sauce: chop the capers, gherkins, garlic, and parsley. Mix with the mayonnaise and lemon juice. Season to taste.
- Clean the squid, cut into rings.
- Prepare two bowls: one with beaten egg, one with flour.
- Heat oil to 160°C. Coat squid in egg, then flour. Deep-fry for 5 minutes.
- Drain on kitchen paper and sprinkle with salt.
- Serve with lemon wedges, tartar sauce and a glass of Riva.
