Ingredients
- 2 turkey fillets (about 150-200 grams each)
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
- 1 sprig of fresh thyme for garnish (optional)
- 100 grams fresh or dried cranberries
- 50 ml orange juice (freshly squeezed for the best flavor)
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon cinnamon

Combine the cranberries, orange juice, honey, and cinnamon in a small saucepan. Bring to a boil, then reduce the heat and let simmer gently for 10-15 minutes until the cranberries are soft and the sauce thickens slightly. Allow to cool.

Season the turkey fillets with salt and pepper. Heat the olive oil or butter in a pan over medium heat and cook the turkey fillets for 5-6 minutes on each side, until golden brown and cooked through. Remove the fillets from the pan and let them rest for a moment.

Place the turkey fillets on plates and spoon the cranberry sauce over or beside them. Optionally garnish with a sprig of fresh thyme.
