Ambar Sour Royale

Ingredients

  • 50 ml Almave Ambár
  • 25 ml fresh lemon juice
  • 15 ml sugar syrup (with a hint of vanilla)
  • 20 ml aquafaba (or egg white, if desired)
  • 30 ml Acala Sparkling Tea White Wine Style
  • Garnish: a dried lemon slice and a sprig of fresh rosemary

Preparation method

  1. Start by shaking Almave Ambár, lemon juice, sugar syrup and aquafaba in a shaker without ice (dry shake). This will ensure that the aquafaba foams nicely and the cocktail gets a silky texture.
  2. Add ice to the shaker and shake again (wet shake) to thoroughly chill and mix the cocktail.
  3. Double strain the cocktail into a chilled coupe glass to remove the ice flakes and create a smooth, velvety drink.
  4. Carefully add the Acala Sparkling Tea to give the cocktail a sparkling finish without disturbing the foam.
  5. Garnish with a dried lemon wedge and a sprig of rosemary for a refined presentation and a subtle aromatic boost.
