Christian and Alex, two brothers inspired by the nature of their native Norway, started experimenting with fermented spruce needles in their garage. This hobby developed into a serious business, with the help of food scientists and a dedicated lab space.

Ambijus is the brainchild of Christian and Alexander, two passionate minds who cut alcohol out of their lives but wanted to preserve the nuance and depth of a good wine. This quest gave rise to something unique: Ambijus, an entirely new category of alcohol-free drinks, made in Norway, with a clear gastronomic heart.

In their lab at Sollihøgda — their own "terroir" — the makers experiment with fermentation, extractions, infusions, and trials that build an architecture of flavors. Local ingredients such as Hardanger apples, grains, wild berries, lingonberries (tyttebær), elderflower (hylleblomst), kombucha, herbs, and even grains and seaweed come together in exciting combinations that bring forward complexity and nuance, all without alcohol.

The result? Drinks you can't simply call an alternative, but full-fledged flavor experiences. Perfect alongside food, refined, surprising, and thoughtfully crafted.
