Grilled chicken drumsticks with mango salsa

Grilled chicken drumsticks with mango salsa

Ingredients

  • 4 chicken legs
  • 2 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon paprika powder
  • 1 teaspoon cumin powder
  • Salt and black pepper to taste For the Mango Salsa:
  • 1 ripe mango
  • 1/4 red onion
  • A handful of fresh coriander, finely chopped
  • Juice of 1 lime
  • Salt and black pepper to taste

Preparation method

  1. Marinating the Chicken Drumsticks: In a bowl, mix the olive oil, finely chopped garlic, paprika powder, cumin powder, salt and black pepper.
  2. Marinate the chicken drumsticks in this marinade, making sure they are well covered. Let them marinate in the fridge for at least 30 minutes to 1 hour.
  3. Preparing the Mango Salsa: Mix the mango cubes, finely chopped red onion, fresh coriander and lime juice in a bowl.
  4. Season the salsa with salt and black pepper to taste. Set aside to let the flavors mingle while you grill the chicken thighs.
  5. Grilling the Chicken Drumsticks: Preheat a grill pan or barbecue over medium heat.
  6. Place the marinated chicken thighs on the grill and grill for about 10-12 minutes on each side, or until cooked through and nicely grilled.
  7. Serving: Remove the grilled chicken thighs from the grill and place them on a serving platter.
  8. Serve the chicken drumsticks with the refreshing mango salsa on the side.
  9. Garnish with extra fresh coriander leaves if desired.
